Care
Hand wash each knife with warm water and a drop of soap, then dry it right away. Never put it in the dishwasher: the heat and detergent dull the edge and damage the handle.

How do I keep it sharp?
Hand wash your knife and dry it right after use, that alone keeps the edge in shape far longer. Hone it every few weeks and put it on a whetstone a few times a year, depending on how much you cook.
Can it go in the dishwasher?
No. Detergent and heat dull the edge and damage the handle. Hand wash only, then dry it thoroughly.

The Damascus pattern is nicer in person and each blade has a slightly different look. I didn’t expect the Kiritsuke to become my favourite, but it is perfect for clean, precise slicing, particularly with salmon. No regrets with this purchase.
